At Pea Green Boat we appreciate the importance of supporting local businesses where possible, and will always try our best to source as much as we can from local suppliers.
All of the flour we use is organic, from Mungoswells Farm just outside Drem in East Lothian; a mere 15 miles from our little bakery! Both the outer boxes for our cases of sablés and the sablé boxes themselves also come from other companies in Edinburgh.
On the other hand, we happily admit that Italy produces the best Parmesan, so we do use Italian 24 month aged parmesan from the officially designated provinces of Italy.
Rest assured, we will never compromise on the quality of our ingredients, but think that it is nice to know that by enjoying our cheese sablés, you are not only supporting our own small business, but other local businesses too.
